Three Japanese founders, one small shop.

enmusubi is opening Copenhagen's first real onigiri shop in spring 2027. Tonight is a preview.

We bring the important things straight from Japan, and use what grows here for the rest.

Rice

From Japanese farmers

Short-grain rice that stays soft and slightly sweet at room temperature. The reason onigiri works at all.

Nori 海苔

Ariake Sea, Saga · first harvest

From Japan's most celebrated nori waters, roasted until it snaps. Dark and glossy is the sign of the top grade. It melts on the tongue and tastes of the mineral-rich sea it grew in.

Umeboshi 梅干し

Hand-picked ume, salted and sun-dried

Picked from the tree in June, packed in salt, dried in the summer sun. Sour, salty, a little fruity. One small piece carries a whole onigiri.

Miso 味噌

Ten-grain miso, brewed in Saga since 1901

Soybeans, barley, black rice, red rice and six more grains, fermented slowly in wooden vats the way the same family has done for 125 years. Stirred into dashi at the end, never boiled.

Salmon

Grilled and flaked by hand

Salted, grilled, then broken into flakes with chopsticks. No mayo, no sauce. Just fish and rice.

Shiso 紫蘇

Dried red shiso leaf

The purple flecks. Herbal and tangy, mixed straight into the rice. Try it before anything else so you taste it clean.
