enmusubi brings real Japanese onigiri to Copenhagen: a small shop opening in spring 2027, and tonight, a first taste.

01 · Rice

Rice

Hitomebore · Miyagi · grown with half the usual chemicals

From the Sendai plain, fed by rivers off the Ou mountains. Warm days without extreme heat and cool nights let the grain ripen slowly. Soft, glossy, gently sweet.

02 · Nori

Nori 海苔

Ariake Sea, Saga · first harvest of the season

From Japan's most celebrated nori waters, roasted until it snaps. Dark and glossy is the sign of the top grade. It melts on the tongue and tastes of the mineral-rich sea it grew in.

03 · Umeboshi

Umeboshi 梅干し

Hand-picked ume · salted · dried in the summer sun

Picked from the tree in June, packed in salt, laid out to dry. Sour, salty, a little fruity. One small piece carries a whole onigiri.

04 · Miso

Miso 味噌

Ten-grain miso · brewed in Saga since 1901

Soybeans, barley, black rice, red rice and six more grains, fermented slowly in wooden vats by the same family for 125 years. Stirred into dashi at the end, never boiled.

05 · Salmon

Salmon

Salted · grilled · flaked by hand

Grilled, then broken into flakes with chopsticks. No mayo, no sauce. Just fish and rice.

06 · Shiso

Shiso 紫蘇

Dried red shiso leaf · yukari

The purple flecks. Herbal and tangy, mixed straight into the rice. Try it first, so you taste it clean.
